What cooking utensils would you take with you if stranded alone on an island?

My oven lighter to get a fire going, and a frying pan.

How did you get into the industry?

My parents owned a fish and chip shop and I practically grew up in the place. From a young age I really enjoyed the hustle and bustle and the banter with the customers. Almost 30 years on and that part of the job hasn’t changed.

If you could change jobs with anyone else for the day who would it be?

Definitely would have to be Sebastian Vettel, Ferrari’s F1 driver. The glamour and thrills of that job is in complete contrast to mine. Imagine asking Mr Vettel to peel spuds and fillet fish every morning!

What’s your favourite film?

I’m a big film fan, my favourite is The Shawshank Redemption. I remember going to see it at the cinema and for three hours totally lost track of time and was so absorbed in the story I didn’t want it to end. Absolutely brilliant.

What was the first music single you bought?

I was never really into buying music, but I seem to recall it was Now 11. I think we’re at Now 90 something, so it was a while ago.

Do you have a nickname?

No, not really but I believe my wife calls me a few unprintable names!

What did you want to be as a child?

I always talked about going to Law school but the length of time studying put me off. Deep down I always knew that I would be working for myself in some capacity.

If you could have anyone join your team who would it be?

I would love to say some celebrity chef, but it would have to be my sister because with her and my wife working side-by-side there would honestly be no better team serving my customers. They are both Champions League class. Unfortunately, my brother-in-law spotted her talent and decided to marry her (he’s also is in the trade).

What’s your favourite food?

Being Italian it has to be pasta but I do love fresh fish and chips fried to perfection. You really you can't beat it!

What sports team do you support?

The Italian national football team but we just got knocked out of qualification for the next World Cup so it’s a bit of sore point just now.

If you could meet anyone in the world, dead or alive, who would it be and what would you ask them?

Both my grandfathers who died before I was born. I’ve heard so much about them from my parents that I would really have loved to sit down with them, have a chat and maybe a glass of wine.

If you were Prime Minister for a day what’s the first thing you would do?

I would like there to be more help for small business owners to expand their businesses in terms of less red tape and better tax breaks. I think that would stimulate the economy at a grass roots level.

If you could go back in time what year would you choose?

The year that Apple shares first listed on the stock market. I read somewhere that £1,000 shares then would be worth £3m now.

Do you have any hobbies?

I love getting out on my road bike, but unfortunately these days it doesn’t happen that often.
