What advice would you like to pass on to a young chef/manager/frier?
Hard work and dedication will pay off. Take the rough with the smooth but most of all enjoy it.
How did you get into the industry?
I was peeling potatoes two evenings a week next door to a newsagents I worked in when a friend phoned, moaning his manager had walked out. I jokingly said I would go and work for him. I had a week’s holiday booked so went for a trial and, after two days, I handed my notice in at the newsagents and the rest is history. Eighteen years later, I’m in a different shop with a different boss but still loving it and I’m the happiest I've been in years. I’ve got a great team around me and excellent customers.
If you could change jobs with anyone else for the day who would it be?
Any British World or Moto GP bike racer. Just to have the opportunity to go as fast as possible on a race bike.
What’s your favourite film?
I don't really watch films, but if I had to choose it would be Con Air. It’s the one I've watched the most.
What was the first music single you bought?
Being honest, it was Cotton Eye Joe by Rednex purely because it was really silly!
Do you have a nickname?
Yes, Cookie Boy and the person that gave it to me doesn't know why!
What did you want to be as a child?
A farmer and then a chef in the army.
If you could have anyone join your team who would it be?
Gordon Ramsay, I just love his attitude when he’s trying to help people and they don't listen, plus I think he would bring in the crowds.
What’s your favourite food?
Galaxy Chocolate, it’s always ready to eat when we’re busy.
What sports team do you support?
I’m only into motor sport, especially bikes. They race hard to win and entertain us. I closely follow Leon Camier, who competes in the World Superbikes, as well as Valentino Rossi and Cal Crutchlow in the Moto GP and Shane Byrne from British Super Bikes.
If you could meet anyone in the world, dead or alive, who would it be and what would you ask them?
I would love to meet Carl Fogarty because he was my favourite bike racer in the ‘90s. I would ask him if he would still be racing if he could and who his favourite bike racer is now.
If you were Prime Minister for a day what’s the first thing you would do?
Change the school leaving age back to 16! Trying to find staff that can work any hours, especially all day on a Saturday, has got a lot harder since the leaving age went to 18! Even if they are doing an apprenticeship they are limited to hours they can work. Surely, if someone wants to work, we should let them work.
If you could go back in time what year would you choose?
1997, I was still living at home with parents, I had no stress, no debt and I could then change a lot of things in the future
Do you have any hobbies?
Fishing and DIY.
