30 Minutes With…

…Eric Snaith, Eric’s Fish & Chips, Thornham, Norfolk

What would you change in your business and why?

I’d like to be able to serve more local seafood, but unfortunately apart from shellfish, it’s hard for us to source much consistently. I’d like this as it would be putting more investment back into the local community.

How did you get into the industry?

I saw an opportunity in our local area to serve the nation’s favourite dish but attempt to take it up a level using the skills I had developed being a chef for 20 years. When a site came up on the coast that we thought would work, we jumped at the opportunity.

If you could change jobs with anyone else for the day who would it be?

Any Top Gear presenter. It’s always looked like a great job to be paid well for!

What’s your favourite film?

Not sure if I have a single favourite, I’m not one for watching films over and over, although I’ve seen Kill Bill a few times and love most of Tarantino’s work.

What was the first music single you bought?

Do the Bart Man by Bart Simpson on 7” vinyl! I have no idea why, I must have liked it at the time!

Do you have a nickname?

Not that is used to my face! I used to be known as Buzz, but less so now, apparently I look similar to Buzz Lightyear!

What did you want to be as a child?

I dreamed of playing for the great Norwich City FC. My dad and I have had season tickets since I was nine but unfortunately, I wasn’t good enough at football and was carrying about two stone too much!

If you could have anyone join your team who would it be?

Gordon Ramsay for his cooking skills and for the fact he would make me seem like a nice guy. Or Alan Partridge as he is hilarious!

What’s your favourite food?

Buffalo wings, they’ve always been my guilty pleasure - hot and crispy - what is not to like!

What sports team do you support?

Our local team, Norwich City FC. We’ve had our ups and downs but it’s always fun, and a great thing to do with my dad and friends. My eldest daughter has started coming with me now as well which is a really nice time together.

If you could meet anyone in the world, dead or alive, who would it be and what would you ask them?

My granddad died before I was born, so I would love to go back and meet my mum’s father. I’ve heard a lot about him and, apparently, we are similar so it would be great to sit down and have a beer with him.

If you were Prime Minister for a day what’s the first thing you would do?

Probably ban TripAdvisor! Although I don’t totally hate it and we do get some helpful feedback, some of the people on there do not deserve a platform for their drivel.

If you could go back in time what year would you choose?

The swinging sixties to see the Beatles perform live, and go for the Union Jack Jaguar E-type, Austen Powers style!

Do you have any hobbies?

When I have time I like to play golf and enjoy road cycling and running.

What question would you like to ask our next “30 minutes with”?

You’ve been given £500,000 to spend on your business. You can spend it on anything but it must be a unique/new idea. What would you do and why?
