The Fish Hoose in Thornton, Fife, has only been opened a year but has already won awards and plaudits galore. However, that’s not such a surprise when you learn that the man behind it, Colin Cromar, has an enviable track record with some of the most respected fish and chip shops in the country, including Anstruther Fish Bar in Fife and Cromars in St Andrews.
When Colin took over the premises in Thornton, it was already running as a chip shop. However, Colin wanted to upgrade the shop and take the opportunity to install equipment to keep in line with his environmental vision. One item that was on top of his shopping list was a Peel Tech filtration system to manage the potato and starch waste.
Colin’s many years’ experience had taught him that no matter how well a drain is flushed after the day’s chip prep, the waste always builds up causing costly blockages and bad odours both inside the shop and in the surrounding neighbourhood. Colin had installed a Peel Tech at a previous site which had very poor drainage and had found the machine had solved the issues immediately.
Colin comments: “The machine was very quick and straightforward to install, it sits very nicely beside the rumbler and catches all the peel and starch before it hits the drain. The water going down the drain looks amazingly clear and the waste peel bag is very easy to empty. I wouldn’t be without it.”
Although it has been law since 2016 to ensure that food waste is not deposited in a public drain or sewer, the actual implementation of the legislation at smaller businesses such as fish and chip shops has not really bitten yet. However, the Peel Tech manufacturer understands that several water authorities are now looking at this more closely. With potential fines of up to £10K, it’s something all Fish & Chips shouldn’t ignore.
Colin adds: “It’s also good to know that by using this machine I won’t get into any trouble with the environmental folks and run the risk of a fine.”
